While the bulgur is resting, chop the dry onion into as small and equal cubes as possible. Heat a wide pan over medium heat and add 0.25 cups of extra virgin olive oil to the pan. Add the chopped onions to the pan and sauté for approximately
5-7 minutes until they become translucent and slightly pink. After the onions have softened, add the tomato paste and pepper paste. Continue to sauté by stirring constantly for another
1-2 minutes until the raw smell of the pastes is gone and the color changes. Remove from the heat and let it cool down.
