1 pieces carrots
1 pieces zucchini
1 piece yellow onion
1 pieces eggs
3 tablespoons flour
0.5 bunch parsley
1 teaspoon cumin
1 teaspoon salt

Step-by-Step Preparation

As a preliminary preparation, grate the carrots and the peeled zucchini using the fine side of a grater. Grate the dry onion in the same way or chop it very finely into small pieces. Finely chop the parsley with a sharp knife.

Transfer the pre-boiled and completely cooled quinoa into a large mixing bowl. Add the grated carrots, zucchini, and onion on top.

Crack the egg into the same bowl, and add the flour, finely chopped parsley, cumin, and salt. Mix gently but thoroughly with your hands or a spatula until all ingredients are completely combined.

Preheat the oven to 180 degrees and let it heat up. Line a baking tray with parchment paper.

Break off walnut-sized pieces from the prepared mixture, lightly squeeze them in your palm, and shape them into flat meatballs by rolling. Arrange the shaped meatballs on the baking tray with spaces between them.

Cook in the preheated oven for approximately 15 to 20 minutes under controlled conditions until the outside of the meatballs turns slightly crispy and golden yellow. Serve the hot meatballs after letting them rest for 5 minutes after taking them out of the oven.

Chef's Tips

To ensure the quinoa holds its shape as meatballs, make sure to drain the excess water after boiling and ensure it is completely cooled.
If the mixture sticks to your hands while shaping, you can lightly moisten your hands with water.

Alternative & Optional Ingredients

You can use whole wheat flour or oat flour instead of flour.
You can prefer finely chopped dill instead of parsley.

To add depth to the mixture and enhance the aroma, you can lightly toast the cumin in a dry pan before using.
